Yummy Baked Chicken Enchilada

Today, I present to you….Baked Chicken Enchilada! We used to make this recipe a lot. Thankfully we rediscovered it! The result is a cheesy and flavorful enchilada with a mild kick thanks to the sauce! Hope you enjoy!



  • Tortillas
  • Cheese
  • Green Pepper
  • Corn
  • Salsa Verde
  • Black Beans
  • Taco Sauce
  • Cilantro
  • Enchilada Sauce (Store bought)
  • Chicken Cooked and Shredded

These are just the toppings I had at home. It can be personalized with what you like! Think of what you would put in a burrito.


Step 1: Warm the tortillas. I made about 7 to 8.

Step 2: Assemble the Enchiladas! Spread the Enchilada sauce, chicken, beans, cheese and the other toppings. img_2284.jpg

Step 3: Then roll ’em up and place in your baking dish. I squeezed them tight together to fit all of the enchiladas.

Next, add a layer of cheese on top and any extra toppings left over. Top with cilantro!

Step 4: Bake at 350 degrees for 18-20 minutes. Finished!2017-11-08-PHOTO-00000029
